Ingredients

  • 1/4  cupfinely chopped red onion
  • 1  tablespoonolive oil
  • 3  mediumapples (such as Pink Lady) cored and chopped (about 3 cups)
  • 2  tablespoonssnipped fresh sage or 2 teaspoons dried sage, crushed or 1 tablespoon snipped fresh thyme or 1 teaspoon dried thyme, crushed
  • 2  tablespoonsdried cranberries
  • 1  tablespoonapple brandy (optional)
  • 12  packaged crisp flatbreads, large whole wheat crackers, or toasted pita wedges
  • 6  tablespoonsshredded lowfat sharp white cheddar cheese or Parmesan cheese

Directions

In a medium saucepan cook onion in hot olive oil over medium heat for 2 to 3 minutes or until softened. Stir in apples, sage, and dried cranberries. Cook, covered, over medium heat for 10 to 12 minutes or until apples are softened, stirring occasionally. Remove from heat; stir in apple brandy, if desired. Let cool slightly.* Serve warm over flatbread. Top with shredded cheese.

*Make-Ahead Tip: Cover and refrigerate apple mixture up to 6 hours. Let stand at room temperature 20 minutes before serving.
