    Ingredients

    • 1 14 ounce can reduced-sodium chicken broth
    • 1 medium zucchini, quartered lengthwise and sliced 1/2 inch thick
    • 1 cup bulgur
    • 2 medium carrots, cut into thin bite-size strips
    • 1/2 cup chopped onion
    • 2 tablespoons snipped fresh oregano or 1/2 teaspoon dried oregano, crushed
    • 1/4 teaspoon crushed red pepper
    • 1/2 teaspoon finely shredded lemon peel

    Directions

    In a medium saucepan stir together the chicken broth, zucchini, bulgur, carrots, onion, dried oregano (if using), and crushed red pepper.

    Bring to boiling; reduce heat. Simmer, covered, for 12 to 15 minutes or until bulgur is tender and broth is absorbed. Stir in the fresh oregano (if using) and lemon peel.
