Poached Summer Peaches with Cherries
Ingredients
- 1 1/2 cups white Zinfandel, rose wine, or cranberry-apple drink
- 1 2-inch piece stick cinnamon
- 3 medium peaches, halved and pitted
- 1/2 cup fresh dark or light sweet cherries (such as Bing or Rainier), pitted
- 2 ounces white baking bar
- 1/2 teaspoon shortening
Directions
In a 10-inch skillet bring wine and cinnamon just to boiling. Add peach halves and cherries; reduce heat. Simmer, covered, about 10 minutes or just until peaches are tender. Use a slotted spoon to transfer peaches and cherries to a shallow serving dish.
Cook the wine mixture, uncovered, over medium heat about 10 minutes or until reduced to about 1/2 cup. Discard cinnamon. Spoon the wine mixture over peaches and cherries.
Meanwhile, in a small microwave-safe bowl microwave the baking bar and shortening on 100% power (high) for 1 to 1 1/2 minutes or until melted, stirring once. Cool slightly.
Spoon the melted baking bar into a self-sealing plastic bag. Snip a 1/4-inch corner off the bottom of bag. Squeezing gently, drizzle the melted baking bar over the peaches and cherries.
