Sorbet Melon Parfaits

Ingredients
- 2/3 cupseeded watermelon balls
- 2/3 cupcantaloupe balls
- 2/3 cuphoneydew melon balls
- 1/2 cupmango sorbet or lemon sorbet
- 1/4 cupchampagne or sparkling white grape juice, chilled
- Fresh mint sprigs (optional)
Directions
Arrange the watermelon, cantaloupe, and honeydew balls in two wine glasses or goblets. Place scoops of the sorbet on top of the melon.
Pour about 2 tablespoons of the champagne over sorbet and melon in each glass. If desired, garnish with mint sprigs. Serve immediately.
