Sorbet Melon Parfaits

Ingredients

  • 2/3  cup seeded watermelon balls
  • 2/3  cup cantaloupe balls
  • 2/3  cup honeydew melon balls
  • 1/2  cup mango sorbet or lemon sorbet
  • 1/4  cup champagne or sparkling white grape juice, chilled
  •   Fresh mint sprigs (optional)

Directions

Arrange the watermelon, cantaloupe, and honeydew balls in two wine glasses or goblets. Place scoops of the sorbet on top of the melon.

Pour about 2 tablespoons of the champagne over sorbet and melon in each glass. If desired, garnish with mint sprigs. Serve immediately.
