Pork Chops with Black Bean Salsa

Ingredients

  • 4  pork loin chops, cut 1 1/4 inches thick (about 3 pounds)
  • 1  teaspoon Jamaican jerk or Cajun seasoning
  • 1/8  teaspoon ground black pepper
  • 1/2  of a 15-ounce can black beans, rinsed and drained (3/4 cup)
  • 2/3  cup corn relish
  • 1 1/2  teaspoons lime juice
  • 1/4  teaspoon ground cumin
  •   Lime wedges

Directions

Preheat broiler. Trim fat from meat. Sprinkle seasoning and pepper onto both sides of chops. Place pork chops on the unheated rack of a broiler pan. Broil 3 to 4 inches from the heat for 16 to 20 minutes or until done (160°F), turning meat over halfway through broiling.

Meanwhile, for salsa, in a small bowl combine black beans, corn relish, lime juice, and cumin. Serve chops with salsa. Pass lime wedges to squeeze over chops and salsa.
