Pasta Spinach Salad
Makes: 8 to 12 side-dish servings

Ingredients
- 6 ounces dried whole wheat or regular penne or cavatelli pasta
- 2 medium tomatoes, peeled, seeded, and chopped
- 1/2 cup crumbled feta cheese (2 ounces)
- 1/3 cup bottled reduced-calorie Italian salad dressing
- 1/4 cup sliced green onions
- 2 tablespoons sliced pitted ripe olives
- 6 cups torn fresh spinach
- Cracked black pepper
Directions
Cook pasta according to package directions; drain. Rinse pasta with cold water; drain. In a large bowl, combine the pasta, tomatoes, feta cheese, salad dressing, green onions, and olives. Cover and chill in the refrigerator for at least 2 hours or up to 24 hours.
To serve, arrange spinach on a large serving platter; spoon pasta mixture over spinach. Sprinkle with cracked pepper.
