Pasta Spinach Salad

Ingredients

  • 6  ouncesdried whole wheat or regular penne or cavatelli pasta
  • 2  mediumtomatoes, peeled, seeded, and chopped
  • 1/2  cupcrumbled feta cheese (2 ounces)
  • 1/3  cupbottled reduced-calorie Italian salad dressing
  • 1/4  cupsliced green onions
  • 2  tablespoonssliced pitted ripe olives
  • 6  cupstorn fresh spinach
  •   Cracked black pepper

Directions

Cook pasta according to package directions; drain. Rinse pasta with cold water; drain. In a large bowl, combine the pasta, tomatoes, feta cheese, salad dressing, green onions, and olives. Cover and chill in the refrigerator for at least 2 hours or up to 24 hours.

To serve, arrange spinach on a large serving platter; spoon pasta mixture over spinach. Sprinkle with cracked pepper.
