Tropical Fig Salad
Makes: 6 side-dish servings
Ingredients
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 2 tablespoons chopped fresh chives
- 1/4 teaspoon ground black pepper
- 1/8 teaspoon salt
- 6 cups torn mixed salad greens
- 6 fresh figs, quartered lengthwise
- 1 medium mango, seeded, peeled, and cut into chunks
Directions
For the vinaigrette: In a screw-top jar, combine olive oil, lemon juice, chives, pepper, and salt. Cover and shake well; set aside.
In a large bowl, toss together greens, figs, and mango. Drizzle mixture with vinaigrette; toss gently to coat.
