Broiled Zucchini Slices
Makes: 4 servings
Start to Finish: 20 minutes
Ingredients
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon snipped fresh rosemary or 1/2 teaspoon dried rosemary, crushed
- 1/2 teaspoon cracked black pepper
- 1/8 teaspoon salt
- 2 medium zucchini and/or yellow summer squash, cut lengthwise into 1/4-inch slices
Directions
In a saucepan cook garlic in hot oil over medium heat for 30 seconds. Stir in rosemary, pepper, and salt. Drizzle mixture over zucchini; toss to coat. Arrange zucchini in a single layer in a 15x10x1-inch baking pan. Broil about 5 inches from heat for 5 to 6 minutes or until tender, turning once halfway through broiling.
